Ingredients

Burger:
2 lbs ground beef
1 tsp curry powder
½ tsp cardamom
½ tsp cumin
2 Tbsp freshly chopped parsley
1 garlic clove, grated on a microplane
Salt and pepper, to taste
Brioche burger buns, split and toasted
Spiced yogurt:
1 Tbsp olive oil
2 tsp cumin seed
1 cup full fat Greek yogurt
2 tsp curry powder
1 garlic clove, finely grated
Fresh lemon juice
Salt, to taste
Salad, to top:
1 tomato, sliced
1 handful fresh parsley leaves
½ red onion, finely sliced
1 lemon, juice and zested
Olive oil, to taste
Salt, to taste

Steps

1.) Mix all the burger ingredients in a bowl and shape into 6 patties. Season with salt and pepper. Heat a cast-iron skillet over medium-high heat. Cook the burgers on the first side until browned, about 4-5 minutes, then flip and continue cooking the other side, another 4-5 minutes. Remove from pan.
2.) Make the yogurt sauce. Add olive oil to a small skillet over medium heat. Add cumin seeds and toast in the oil until golden, about 2 minutes. Remove from heat and cool slightly. Add yogurt to a mixing bowl and stir in the olive oil, toasted cumin seeds, curry powder, garlic, lemon juice, and salt.
3.) Prepare the salad. Add the tomato, parsley, onion, lemon juice and zest, and olive oil in a bowl and toss. Season with salt to taste.
4.) To assemble, slather the toasted bun with the yogurt sauce, place the burger patty and salad on the bun, and sandwich with the top bun.
