Black Bean Brownies (chEAT)

Who knew yesterday’s leftovers could be today’s rich and chewy brownies? Jax shows you her favorite recipe!

INGREDIENTS
1 (15 oz) can black beans, rinsed & drained
3 Tbsp canola oil
3 eggs
⅔ cup sugar
½ cup cocoa powder
1 tsp vanilla extract
½ tsp baking powder
Pinch of salt
½ cup semisweet chocolate chips, divided

METHOD
Preheat oven to 350°F.

Place the beans and oil in a food processor, blender or immersion blender. Cover and process until combined.

Add eggs, sugar, cocoa, vanilla, baking powder and salt. Cover and process until smooth. Stir in half of the chocolate chips.

Pour into a 9-inch square baking pan coated with cooking spray.
Sprinkle remaining chocolate chips on top.

Bake for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into bars.
