The Gobbler Strangewich
Serves 4

Ingredients:
2 potato rolls
12 oz roasted turkey, sliced ¼-inch thick
1 can sweet potato puree, seasoned with ground nutmeg to taste
2 cups cornbread stuffing
4 Tbsp butter, melted
½ cup parsley leaves, picked
½ cup celery leaves, picked
Salt and pepper

Cran-Apple Chutney Mayonnaise:
2 Pink Lady or Gala apples, peeled, cored, and diced into ¼-inch cubes
1 shallot, peeled and minced
⅓ cup brown sugar
¼ cup orange juice
1 cup frozen cranberries, thawed
1 cup Hellmann’s Mayonnaise
⅛ tsp ground ginger
⅛ tsp ground cinnamon
Pinch of ground cloves
1 tsp fresh tarragon, minced
Salt and pepper

Steps:
Preheat oven to 450ºF.
Place first 5 ingredients for Cran-Apple Chutney Mayo in a pot. Simmer for 20 minutes or until apples are tender and cranberries have fallen apart. Mash slightly with a potato masher, remove from heat and allow to cool.
In a bowl, mix remaining chutney ingredients with cooled chutney and set aside.
To assemble, cut each potato roll in half. Smear with chutney-mayo, top with ½ the sliced turkey, a layer of sweet potato, remaining turkey, another smear of chutney-mayo and top with prepared stuffing.
Brush with melted butter and bake in the oven for 10-15 minutes, until stuffing is golden and sandwich is warmed through.
Garnish with parsley and celery leaves. Serve with extra mayo on the side.
