Fresh watermelon, cool mint and crunchy feta croutons combine to create a sweet, savory and satisfying salad. Pair with Gold Peak Green Tea. RECIPE BELOW:
WATERMELON AND MINT SALAD w/ FETA CROUTONS
1 large / 2 small watermelons, cut into 2” cubes
1 large bunch mint, torn
8 oz. crumbled feta, divided
1/2 sourdough loaf, cut into 2” cubes
1/3 cup extra virgin olive oil
1 large lemon, zest and juice
salt and pepper
Preheat the oven to 375*
On a baking sheet, add the sourdough cubes and drizzle with 2 tbls. of extra virgin olive oil, add half of the feta and toss gently, season with pepper and bake for 15min or until golden brown and crispy – remove and allow to cool to room temp.
In a bowl, add the zest and juice of a lemon, salt and whisk in remaining olive oil.
In a large serving dish, add watermelon, mint, and cooled feta croutons with the dressing.
