A different and delightful truffle recipe to satisfy that sweet tooth.
1 package (7 oz.) speculoos cookies
1/2 cup cookie butter
1/3 cup powdered sugar
1 cup white melting chocolate
In a food processor blend the speculoos cookies, cookie butter, and powdered sugar until a dough forms. Transfer to a bowl.
Scoop and roll the cookie dough into balls, 1 inch in diameter. Freeze for 15 minutes.
In another bowl melt the white chocolate in the microwave for 1 minute. Stir well into a nice glaze.
Dunk and cover the truffle balls into the white chocolate, one at a time. Allow to harden and serve.
