Buffalo Chicken Bacon Poppers


Lazarus makes indulgent spicy buffalo chicken poppers wrapped in bacon with blue cheese. They’re great for parties or game days and only take half an hour to make!


1 6-ounce chicken breast, cut into 1/4-inch cubes (about 25-30 pieces)
2 tablespoons unsalted butter, melted
1/2 cup hot sauce, (I like Frank’s brand)
12 slices thick cut bacon, halved
1 cup, crumbled blue cheese


Preheat oven to 400 degrees F. Soak toothpicks in water to prevent them from burning in the oven.

In a large bowl, mix chicken with melted butter and hot sauce until well coated. Lay a 1/2 slice of bacon flat and fill with one piece of chicken, and one piece of blue cheese in the center. Fold the bacon over the filling and use a toothpick to close tight.

Cook in the oven until the bacon is crisp and sizzling, about 25 minutes.
